Eggplant - Casper
I got these seeds from Annie's Heirloom Seeds and from trades. With a mild, earthy mushroom flavor, these prolific plants actually prefer cooler temperatures. They tend to stall out during heat and drought, but thrive when the temperatures come back down. A great option for cooler areas and shorter season gardeners. Casper is less bitter than other varieties, and if picked young, the skin can be eaten right along with the rest of it. These 5-6 inche long by 2 inch wide elongated teardrop shaped eggplants originated in France. The solid white colored eggplants stand out in the garden.
