Eggplant - Japanese White Egg
I got these seeds from Baker Creek. The Japanese White Egg eggplant grows 3-4 feet tall and produces abundant 2-3 inch white eggplants that resemble large chicken eggs. Use these eggplants for stir fry, baba ganoush, or for pickling. Plants show good disease resistance, but stall out in growth and production if the temperature is over 90-degrees. Said to have a mild, mushroom like flavor, these little eggplants make excellent mushroom substitutes in recipes. The skin is edible, the seeds are small, and the yields are good. Pick these when they are white. Once they turn yellow they become bitter. Leave a couple to turn bright yellow to save seeds from.
