Pepper - Anaheim
I got these seeds from White Harvest Seed Company, Bounty Beyond Belief, and John Scheepers Kitchen Garden Seeds. Anaheim peppers tend to be relatively mild on the heat scale (500 - 2,500 Scoville heat units), and they're versitile enough that you can swap them out for bell peppers in most recipes to add just a little kick without your more heat-intolerant guests taking much notice. These peppers get 5-9 inches long, ripening from green to red. They are Capsicum annuum. Anaheim peppers can be used for almost anything from cooking to salsa to canning or pickling, but most sites tend to agree that roasting them is especially delightful.

Anaheim - Sonora
The Sonora Anaheim pepper is a milder version of the standard Anaheim, achieving just 300-600 Scoville heat units. It also starts green and matures red, but is commonly used while still green. They can grow up to 10 inches long, and is just as versetile for cooking. A suggestion I've seen a couple times is to use Sonora Anaheim peppers for stuffing peppers due to their larger size.
