Pepper - Chimayo
I got these seeds from Adaptive Seeds. Chimayo peppers are 4,000- 6,000 Scoville units - the equivalent of a Jalapeno pepper. Named for a town in New Mexico, these peppers are said to be highly sought after by pepper connoisseurs. That said, the "earthy" and "smokey" flavor is only produced by those grown in that specific region due to it's specific climate (long hot summers and very little rainfall). A few different people seem to claim the flavor is quite different when grown outside of that micro-climate. Regardless, it's a good pepper for making powder or for drying to make ristras. These peppers ripen from green to red and measure 3-7 inches long depending which site you find. They all tend to agree that Chimayo peppers offer excellent flavor without overpowering heat.
