Pepper - Pasilla Bajio
I got these seeds in a trade. Pasilla translates to "little raisin" in Spanish. These 6-8 inch long peppers start light green, turns dark green, and then matures to a dark chocolate brown. Peppers are about 1-inch wide and grow on 2-1/2 - 3 foot tall plants. This Capsicum annuum variety is prolific, with reports of up to 20 peppers per plant. Pasilla Bajio is grown specifically to be dried and crushed into a powder. It's used in Mexican mole sauces. In other recipes, use it to add a rich, smokey flavor with a bit of heat. Like other hot peppers, the more mature it is, the hotter it gets, so pick it dark green if you want a milder heat. The only reference I could find with actual numbers was 1,000-2,000 Scoville units, though reviews of the pepper from actual growers and eaters indicate there is some variability and it may be hotter than that in some cases.
