Peppers
Peppers are typically started several weeks before the last frost date. They often require heat to germinate, so a heat mat or warm location is helpful. Generally the hotter peppers (especially super hots) require a heat mat to germinate and can still take much longer to come up than a sweet pepper variety. Peppers come in all shapes and sizes, and lots of colors from green and red to orange, white, yellow, purple, black, and blue. Uses vary from fresh eating in salads to grilling, stuffing, cooking, frying, or drying as a seasoning. Some are so insanely hot they're really more of a novelty.
I currently have all of my peppers sorted alphabetically. Some day I may take the time to split them based on hot or sweet, but for now alphabetical will have to do.
